Cranberry-Apple Chutney

Cranberry-Apple Chutney

Ingredients:

1 T. cooking oil as canola

1 small onion, minced

1 T. fresh ginger, zested

1 garlic clove, minced

½ t. allspice

1 whole star anise

1 ½ cups granulated sugar

1 cup cider vinegar

1 cup water

2 Granny Smith apples, cored, and finely diced

1 12 oz. bag of fresh cranberries (frozen whole cranberries work if unavailable fresh)

½ cup golden raisins

Lets Cook:

In a large sauce pan, heat oil over medium heat and sauté onion, ginger, garlic, allspice, and star anise.  Cook until onion is softened and translucent, about 5 minutes.

Add sugar, vinegar, and water, bring to a simmer; add remaining ingredients:  apples, cranberries, and raisins.  Simmer over low heat for about 25 minutes, stirring occasionally until cranberries have popped and softened and chutney becomes thick and jammy like.  Remove star anise, and serve warm with seared coriander crusted duck for a punch of flavor your guests will not forget!
