Honey-Glazed Roasted Figs w/Brie
Ingredients:
1 7oz. package of dried *figs, or about 20 fresh figs (available late summer)
1 large shallot, thinly sliced
1 wedge of brie, thick, small slices
1 large baguette, thinly sliced
Olive oil for tossing
Honey for drizzling
*Mission Figs: Known as the cream of the crop when it comes to figs, are tear drop in shape with thin purplish skin, and a reddish flesh. They come to us originally from the San Diego California coastal area planted in the late 1700s by the Franciscan missionaries. The mission fig, also know as the Black Mission or the Franciscana fig, is still considered one of the highest quality figs grown in the United States today. Resource: Wikipedia and Local Harvest.com
Let’s Cook:
Preheat oven to 350.
Shallots: sauté sliced shallots in olive oil on medium high heat until browned/caramelized 3-4 minutes. Set aside.
Figs: Discard any bit of remaining stem and slice figs in half. Toss with olive oil and place figs face up on your sil-eco silicone mat. Roast in oven for 3-4 minutes until slightly softened and bubbly.
Remove figs from oven and place 2-3 pieces of roasted figs (face up)on a slice of baguette, drizzle with honey, top with slice of brie and sautéed shallots. Place back in oven for a minute or two until brie has melted.
Serve warm and enjoy this succulent flavorful appetizer.
