Radicchio Salad with Basil Vinaigrette
Ingredients:
1/2 cup olive oil
2 T. white wine vinegar
3-4 T. fresh basil, chopped
1 clove minced garlic
½ cup freshly grated parmesan cheese
2 t. fresh squeezed lemon juice
1 t. honey Dijon mustard
1 t. sugar
½ t. Kosher salt and fresh ground pepper to taste
1 head green leaf lettuce, torn
1 head of radicchio, torn
Lets Cook:
Pulse all dressing ingredients (except olive oil) in a blender or food processer. With machine running, add olive oil and process until emulsified.
Toss dressing over prepared lettuce just before serving. This simple yet freshly homemade dressing is a perfect pairing for our rich Three-Cheese Italian Calzone. Enjoy!
