Apricot Sauté over Salmon

Ingredients:

1 large shallot thinly sliced

3 ripe fresh apricots, chopped

1 ½  Tbls. brown sugar

Juice from 1/2  fresh lime

2 Tbls. white wine

Freshly chopped cilantro

Olive oil

Lets Cook:

Sauté sliced shallots in small frying pan with olive oil until browned around edges, about 3-4 minutes.  Add brown sugar, stir until bubbly, adding the chopped apricots, wine, lime juice and chopped cilantro.  Simmer for 2-3 minutes until apricots soften and flavors blend.

Serve warm over freshly grilled salmon filets, enjoy!

*Try serving the Apricot Sauté warm over cream cheese and bay shrimp. Spread on crackers for a simple appetizer.
