Hot Spiced Spiked Cider

Ingredients:

Apple Cider, unfiltered

Rum

*Mulling Spices

Whole Nutmeg

Cinnamon sticks

Whipped Cream

Let’s Cook:

Use about one teaspoon mulling spice to one cup cider.  Pour desired amount of cider and mulling spice in large soup pan, and bring just to a boil.  Reduce heat to a low simmer, stirring occasionally.  Bringing ingredients to boil allows spices to peak by releasing flavors; melding with cider.

Place a cinnamon stick and one shot of rum into each mug and fill with hot spiced cider.  To withhold mulling spices from each serving, use a fine mesh strainer while pouring cider in individual mugs.  Or pour spices and cider directly into each mug, allowing spices to be a part of the finished drink- your choice.  Top each mug with freshly whipped cream, and a quick zest of nutmeg.

*Mulling Spice- a combination of dried orange peel, cinnamon, whole allspice berries, whole cloves, and nutmeg; can be purchased premixed and packaged at markets such as New Seasons or Trader Joes.  Or try mixing your own by placing in a cheese cloth, enclosed with your favorite combination of spices and steep with cider as directed above.
