Stuffed Tomato Salad

Ingredients:
4 medium sized tomatoes, hollowed out
1 avocado, diced
2 celery ribs, chopped
½ cucumber, peeled and diced
3 T. red onion, minced
¼ cup crumbled feta cheese
Bib lettuce
Rice vinegar
Olive oil
Salt and fresh ground pepper to taste

*Additional ingredient ideas- Try capers, diced kalamata olives, grated carrots, or diced radishes for alternative flavors.
For a heartier salad, add small bay shrimp with a dash or two of dried dill and serve w/Kari’s Kitchen sundried tomato-basil oven roasted bread.

Lets Cook:
Slice tops off of tomatoes, hollow out, and set aside. Discard insides, save tops. In medium sized bowl, combine all ingredients including chopped up tomato tops. Add a few shakes of rice vinegar, a swirl of olive oil, salt and pepper and lightly toss. Fill tomatoes with combined ingredients, place on a piece of bib lettuce and top with freshly grated parmesan cheese.
