Fish Tacos – Crispy Fried Fish
Ingredients:
1 lb. of fresh halibut or any firm white fish of your choice such as tilapia, or mahi mahi
1 cup panko crumbs (or if you don’t have, use what is in your cupboard such as corn flakes or Rice Krispies!)
2-3 Tbls. Cajun seasoning or fish seasoning/rub of your choice
Salt and pepper
½ cup flour
1 egg
2 Tbls. milk or water
2-3 Tbls. butter or olive oil
Several chunks of Queso Fresco, crumbled over tacos
Lets Cook:
Rinse fish and pat dry. Cut into fairly narrow pieces about the width of your two first fingers and approx. 3 inches long and set aside.
On a large dinner plate or silpat, dump panko crumbs (or other breading of your choice), Cajun seasoning, salt and pepper and gently mix with fingers.
Wisk egg with milk or water in shallow bowl or dish, set aside.
On other end of silpat if room (or on another plate) lightly dust both sides of fish in flour, dip in egg, and coat both sides in panko crumbs.
Fry fish in butter or olive oil until golden brown on both sides.
While warm, place in tortillas, cover with homemade coleslaws, salsa, and top with crumbled Mexican cheese, Queso Fresco. This is a spongy white, salty fresh Mexican style cheese good for crumbling over tacos. Serve and enjoy your Taquitos de Pescado!
This Mexican Cheese, Queso Fresco is available in super markets such as Fred Meyer. A mild feta is a good substitute.
