Fresh Garden Shrimp Rolls

Ingredients:

1 package Rice Paper Wrappers- need about 12

Rice vermicelli or rice stick noodles (about half a package)

1 cup salad shrimp or cooked prawns, halved- your choice

Butter lettuce, one soft flexible piece per roll (remove stiff white parts)

1 avocado, sliced

1 thinly sliced carrot, julienned

Freshly chopped parsley and/or cilantro or mint- your choice

Whole Basil Leaves, 1 per roll

*Other options:  thin strips of red/yellow peppers, seeded thinly sliced cucumbers, substitute salmon for shrimp- the options are endless!  Have fun with the ingredients and have your kids stuff their own rolls!

Lets Cook:

Fill large bowl with hot water.  Dip one rice wrapper at a time in water for about 30 seconds or until softened and pliable.  Remove from water; place it on a flat work surface (use paper towel to dab off excess water if necessary).  Start filling roll by laying lettuce on bottom half of wrapper, followed by rest of ingredients such as veggies, shrimp meat (sprinkle w/parsley/cilantro), noodles, and top with basil leaf.

Fold the bottom of the rice paper over the filling, fold in both ends of the rice paper, roll rest of wrapper, tucking in the ends as you go- rolling tightly but gently.  Lay seam side down to seal and cut on diagonal- voila, you’ve done it!

Serve with Peanut sauce and lime chili dipping sauce- Enjoy!
