Mango Salsa

Appetizer- Mango Salsa

Ingredients:

4 ripe mangos, peeled and diced, (see instructions on slicing/dicing mangos)

2 whole avocado diced

1 cup finely chopped red onion

4 whole slices of fresh pineapple, diced (about 1 cup)

Zest of two limes

1/2 cup fresh squeezed lime juice (about 4 large limes)

3-4 Tbls. rice vinegar (adds a bit of sweet to soften the lime juice)

4-5 teaspoons olive oil

1 bunch roughly chopped fresh cilantro

*Optional- 1 small jalapeño seeded and finely chopped (seeds are the hot part, rinse pepper after seeded and wash hands)

Season with salt

Lets Cook:

In a medium bowl, combine all ingredients and mix well.  Season with salt as needed.  Serve in 4-5 hours for really fresh taste – will keep covered in refrigerator for 2 days.

Serve with favorite tortilla chips, chip in!
