Mom’s Carrot-Raisin Salad

Ingredients:
4-5 large carrots, grated (1 carrot = about 1 cup)
½ heaping cup full raisins
2 heaping T. of pine nuts lightly roasted and salted
2 T. fresh lemon juice
½. cup and 1 T. mayonnaise
¼ t. salt

Lets Cook:
Keep a close eye on pine nuts when roasting in hot 375 oven. It only takes about 2 -3 minutes, you can smell them coming up to flavor as they turn slightly brown.
Grate carrots, toss with raisins and lightly roasted pine nuts.
Mix mayo, lemon juice, salt and toss over carrot mixture. If you prepare ingredients ahead of time, dress just before serving. For individual servings, scoop a few spoon-fulls of salad inside of a piece of bib lettuce. Enjoy this healthy salad!
