Patti’s Fresh Gazpacho

Ingredients:

3 large tomatoes seeded and diced – Fresh garden or heirloom tomatoes are preferable

2 cups red peppers chopped

2 cups red onion or walla walla sweets, chopped

1 large seeded cucumber, chopped

½ cup celery, chopped

2 Tbls. garlic, minced

2 cups Tomato Juice

Pinch of cayenne

1 tsp. cumin

¼ cup red wine vinegar

Garnish for serving

½ lb. fresh chilled cooked prawns ( 2- per serving)

Sour cream

Fresh dill

Lets Cook:

Finely chop tomatoes, peppers, cucumbers, celery, onion.  Divide mixture in half.

Add garlic to one half of chopped fresh veggies.

Other half, put in blender, add vinegar, and blend until smooth.  Add all remaining ingredients:  tomato juice, cayenne, cumin, stir, and refrigerate 2 hours or overnight to allow flavors to meld.

Chill serving bowls or mugs, and ladle soup just before serving.  Top with chilled prawns, dollop of sour cream and a sprig of fresh dill.
