Peanut Dipping Sauce
Ingredients:
Cooking oil or peanut oil (if on hand)
1 small onion, finely chopped
2 cloves garlic, minced
1 ½ teaspoons chili paste or chili sauce
½ teaspoon curry powder
2 teaspoons salt
½ cup peanut butter smooth or nutty, your choice
¾ cup unsweetened coconut milk
3 teaspoons white wine vinegar
2 Tbls. brown sugar
¼ cup hot water
Lets Cook:
Coat bottom of medium sized sauce pan with oil. Sauté onions and garlic until softened and translucent. Add chili paste, curry powder, and salt. Stir in remaining ingredients, peanut butter, coconut milk, vinegar, brown sugar and hot water; let simmer for a few minutes until the peanut butter dissolves and the sauce thickens.
Remove from heat and pour into pottery bowl. Let cool before serving to let flavors meld. May be made 1 day ahead, store in refrigerator.
A great accompaniment for Garden Rolls, Chicken satay, and rice.
