Side Dish – Roasted Cauliflower with Anchovies and Garlic
Ingredients:
1 head of cauliflower, cut into florets (about 8 cups)
3-4 anchovies, finely chopped
2 garlic cloves, minced
½ cup dry white wine
½ cup coarsely chopped walnuts
½ cup flat leaf Italian parsley
Coarse salt and fresh ground pepper
Olive oil for sautéing and coating cauliflower
Lets Cook:
Preheat oven to 400
Toss cauliflower and walnuts in bowl and coat with a generous amount of olive oil and salt and pepper.
Roast for 30-35 minutes, until golden brown
Coat medium sauté pan with olive oil and cook anchovies and garlic for about 1 minute. Remove from heat, add wine. Return to heat and cook until dressing is reduced by about half.
Pour warm dressing over roasted cauliflower and walnuts and top with parsley.
Serve warm, Enjoy!
