Sticky Rice with Mango

Dessert- Sticky Rice with Mango

Ingredients:

2 cups Sweet Rice (sticky rice)

3 ½ cups water

2 Mangos, peeled and sliced

1/2 cup sugar

½ teaspoon salt

1 lime, juiced

1 can of unsweetened coconut milk

Lets Cook:

Pour measured rice into cooking pot.  Pour water over rice and let soak for 30-45 minutes.

After rice has soaked, place on burner, add salt, stir and bring to a boil.  Immediately

lower temperature to a simmer, cover rice with lid slightly askew so to allow for steam to escape.  Cook rice for about 10 minutes.  Check rice at this time by pulling it away from the bottom of the pan with a spoon to check if all water has been absorbed.  If not, cook for a few additional minutes until water is all absorbed.  Turn off burner, and leave rice fully covered for an additional 5-10 minutes to fully steam rice (heat from pan and burner will retain heat for the final steaming).

While you are allowing for the rice to finish its final steaming, this is the perfect time to make your simple coconut sauce.

Heat coconut milk in pan on burner, stirring frequently to avoid scalding.  As it becomes hot, but not boiling, add sugar and salt.  Cook long enough just to dissolve sugar and salt.  Remove from heat, add lime juice and give it one final stir.

Scoop out balls of sticky rice into individual serving dishes; ladle coconut sauce over rice and top with mango slices. Close eyes and enjoy this creamy Thai dessert!

*Sweet rice has a tough outer shell which the soaking helps to soften.  Do not skip this part or you will end up with hard, uneatable rice.
