Triple-Orange Glazed Sweet Potatoes

Ingredients:

2-3 large sweet potatoes, peeled and sliced in hearty planks

½ cup fresh squeezed orange juice, from about 1 large orange

1 T. condensed orange juice frozen concentrate

Orange zest, from ½ of orange used above for juice

¾ cup honey

Cayenne pepper, dash or two

Kosher salt

Lets Cook:

Preheat oven to 425 degrees.  Cook for 20-25 minutes

Peel and slice sweet potatoes in half, then cut length wise in 3-4 in” hearty planks.  Toss in olive oil, salt, cayenne pepper and roast on your silicone mat/baking sheet from Kari’s Kitchen, in oven for about 15-20 minutes.

Sauce

Whisk honey, orange juice, orange zest, orange concentrate in a small bowl and coat tender potatoes with glaze.  Cook for an additional 5 minutes, or alternatively; broil glaze coated potatoes for a minute or two (with a watchful eye to avoid scorching) – for q quick browned effect.

Orange is a great complimentary flavor to the coriander seared duck.  Serve together and enjoy!
