Artichoke-Olive Dip

Ingredients:

1 cup marinated artichoke hearts (retain marinade)

1 cup freshly grated parmesan cheese

¾ cup strained *green-olives

1 5.2 oz garlic-herb cheese such as Boursin

*Several varieties of green olives are available in bulk at grocery olive bars.  Get creative and try different varieties.  Marinated artichoke hearts, as well as other ingredient options such as sundried tomatoes are readily available at these olive bars.  Have fun adapting the recipe with these fun Italian treats.

Lets Cook:

Place green olives, marinated artichoke hearts, and a few tablespoons of the marinade in a food processor, and pulse until coarsely chopped.

Combine chopped olives and artichoke hearts with remaining cheeses, stir well.  Bake in a ceramic dish for about 30 minutes in 375 degree oven.

Serve warm with thinly sliced bread and enjoy!
